Lemon balm is a delicious little herb that is part of the mint family. Unlike its relatives it has a lemony flavour and fragrance similar to a lemon sherbet. Lemon balm gives a delicate citrus tang to many fish and poultry dishes as well as desserts but it also serves to make a delicious iced tea.
